Episode 1 THE ORIGIN

Genetic studies suggest that the coffee tree Coffea arabica originated in Ethiopia, in the province Keffa. We therefore flew to Ethiopia to discover its numerous wild coffee plantations and its rituals. Thanks to this episode you will discover the process required to harvest and prepare the green coffee beans destined to be roasted all over the world.

Episode 2 THE ROASTING

Jute bags filled with green coffee are sent by farmers worldwide and arrive at our roaster's shop here in Lausanne. The roaster roasts, tastes and assembles the coffee beans to bring out all the aromas that intrinsic to the beans. Like wine, coffee has an infinite number of flavors and colors which vary according to its variety and origin. The secret of a good coffee is the preservation of these flavors from harvest to your cup.

Episode 3 THE SERVICE

The final step in the life of a coffee bean - its preparation. There are multiple brewing and extraction methods used to serve a cup of coffee. Our baristi use freshly roasted coffee from our roaster, they adjust the grind and choose the best method of infusion in order to serve coffee in all its glory. In this episode you will discover some of the flagship methods for preparing coffee as well as some exclusive processes.

Trip to Ethiopia

We flew to Ethiopia with its stunning landscapes to explore its culture of coffee and coffee plantations. They occupy more than 400,000 hectares and coffee production is around 230,000 tonnes per year. More than half is consumed locally, in Ethiopia, where the coffee tradition goes back to the 15th century. We met local farmers who explained the importance of this commodity. It is not only their main source of income, but also their traditional drink. Every morning they roast, pound and prepare coffee to share with relatives and their gods. They hope that the fruits of their labor will is appreciated as much in the world as it is by Ethiopians. With Sleepy Bear Coffee we promised them to handle their coffee with the utmost respect and to share it with our future customers in the best way possible.
